Fact: May is my favourite month. Not because the flowers start to bloom and the trees begin to bud. Not because I can wake at 6 am and see the sun shining. And certainly not because I can now wear shoes rather than boots… although that does help a lot. May is my favourite month because it’s National Burger Month!

I have professed my love for homemade burgers many times on this blog… last summer it was a huge obsession… this summer it could very well escalate to a full-out compulsion… must. make. burgers! I mean, how in the world could you not love burgers? The opportunities and taste profiles are endless! Beef, chicken, turkey… even tofu and seafood can be made into burgers!

To kick-off burger month I wanted to create something subtle, yet flavourful. New, yet familiar. Simple, yet complex. Well, this Spicy Peanut Butter Chicken Burger with Peanut Slaw nails it! It takes ingredients your family already loves, like Kraft Smooth Peanut Butter (yeah, it’s not just for toast!) and gives it a new twist! Just a few tablespoons take this burger from “alright” to “exceptional”… it’s a massive upgrade!

Description

These delicious and unique burgers come together quickly, making them ideal for a busy weeknight meal. A fun twist on a classic peanut chicken recipe, your family will be asking for seconds!


Ingredients

Units Scale

Burgers:

  • 1 lb. lean ground chicken
  • 1/4 cup Panko bread crumbs
  • 1/4 cup fresh cilantro, roughly chopped
  • 2 tbsp Kraft Smooth Peanut Butter
  • 1 tbsp chili garlic sauce
  • Salt & Pepper
  • 4 hamburger buns, toasted

Peanut Slaw:

  • 2 tbsp olive oil
  • 1/2 tbsp white wine vinegar
  • 1 tbsp Kraft Smooth Peanut Butter
  • 1/4 cup thinly sliced carrot
  • 1/4 cup thinly sliced green cabbage
  • 1/4 cup thinly sliced red cabbage
  • 1/4 cup bean sprouts
  • 2 green onions, chopped
  • 1 tbsp fresh cilantro, roughly chopped
  • 4 tbsp chopped peanuts


Instructions

1. In a large bowl thoroughly combine ground chicken, bread crumbs, cilantro, peanut butter, chili garlic sauce, and salt and pepper. Form into 4 patties. Cook on preheated grill for 15-20 minutes, or until internal temperature reaches 165°F (74°C).
2. Meanwhile, prepare the peanut slaw. In a large bowl whisk together oil, vinegar and peanut butter until emulsified. Add carrot, cabbage, sprouts, green onion, cilantro and peanuts, toss to combine.
3. Place cooked chicken patty on grilled or toasted bun. Top with a generous amount of peanut slaw. Serve warm.
