I’m on a beet kick again. I bought a 5lb bag of local Ontario beets yesterday, and I just can’t get enough. Most people tend to shy away from this healthy root vegetable because they don’t know how to prepare them. Actually, cooking beets is quite simple… simply roast them!
How to Roast Beets
1. Preheat oven to 450C.
2. Trim ends of beets. Do not attempt to peel at this point.
3. Place trimmed beets on foil and drizzle with olive oil. Wrap beets in foil to form a packet.
4. Roast for 30-40 minutes (depending on size of beets).
5. Let cool. Skin will peel right off.
