Salad Topped with Blackberries, Fig Goat Cheese & Nuts with Fig Balsamic Dressing
Fact: I eat a salad almost every day for lunch, and you know what… it’s not something that gets tired. There are so many ingredients, dressings, toppings, and variations. Sometimes I get stuck on one particular salad and eat it for a week straight. Sometimes I try out new ingredients and never use them again.
This month however, I have been totally stuck on my Fig Balsamic that I picked up from the Unrefined Olive while at the Ottawa Food & Wine Show… you know, the one I also used on my amazing Fig, Prosciutto & Goat Cheese Crostini? It has paired well with almost every ingredient I have thrown at it, but nothing has compared to the combo I discovered this week; blackberries and fig goat cheese. The sweetness from the berries plus the tartness from the balsamic are all evened out with the creaminess of the goat cheese… sooo good!
Salad Topped with Blackberries, Fig Goat Cheese & Nuts with Fig Balsamic Dressing
Ingredients
Fig Balsamic Vinaigrette
2 cups of spring salad mix
Handful of blackberries
Handful of nuts and seeds
1 oz crumbled fig goat cheese
Directions
1. In a large bowl toss salad green with vinaigrette.
2. Top with blackberries, nuts and cheese.
