Spring Inspired Quinoa Salad
Hard to believe today is the first day of spring. Last year at this time I was enjoying 22C weather, wearing shorts and sunglasses. Fast forward one year, and I am still walking around in my down-filled coat and winter boots that have a hole in the sole (I think they’ve had it with winter too!).
Exhausted by these winter blues, and craving something fresh & light for spring, I pulled together this awesome spring inspired quinoa salad. With lost of fresh veggies and a light apple cider vinegar dressing, it’s sure to give you a spring pick-me-up!
Spring Inspired Quinoa Salad
Don’t be intimated – this quinoa recipe is easy to make. Lots of fresh veggies complement nutritious quinoa, making this a healthy salad for any occasion.
Ingredients
3 tbsp evoo
1 tbsp apple cider vinegar
salt & pepper to taste
4 cups cooked, cooled quinoa (prepared according to package)
1 medium cucumber, cut into cubes
3 mini, sweet red peppers
3 mini, sweet yellow peppers
3 mini, sweet orange peppers
3 green whole onions, sliced
1/2 container cherry tomatoes, cut in half
3 oz crumbled feta cheese
Directions
1. Cook quinoa according to package instructions. Let cook.
2. In a bowl, whisk together oil, vinegar, and salt & pepper. Set aside
3. In a large bowl add cooled quinoa, cucumber, peppers, onions, tomatoes, and feta. Gradually drizzle dressing over salad, tossing as you go.
4. Serve as a complete meal or as a side dish.
