The classic toasted tomato sandwich. It was always a staple in my house. Juicy slices of vine ripened tomatoes topped toasted bread smothered in mayo, a sprinkle of salt and pepper, and it’s ready to go.
This morning I thought I would kick this classic up a notch, and what better to pair this fresh Ontario beef steak tomato with than some buttery avocado and some salty feta…
Toasted Tomato Sandwich with Avocado & Feta
1 pieces of bread
1-2 thick slices of tomato
1/2 of a ripe avocado
1/2 oz of crumbled feta
Salt & pepper to taste
1. Toast bread.
2. Top 1 piece of toasted bread with sliced tomatoes, smother the other piece of bread with avocados.
3. Sprinkle with feta, salt and pepper. Enjoy!
On an unrelated side note…
I decided to switch up my daily routine today, and headed to the gym at 7:00am this morning! I think I might like it better… I just hope I can stay energized until the end of the day.
