Beef & Portabella Mushroom Fajitas
I’m not sure why I don’t make fajitas more often… I mean, they are pretty easy… meat, veggies, cheese, sour cream and salsa… done!
When I was little I would always look forward to the nights we had fajitas for dinner. All the toppings would be spread out on the table for our choosing, everything in it’s own bowl… I remember the cheese would always disappear the fastest.
To this day, when I get a chance to make fajitas, everything gets its own bowl, everyone makes their own, and the cheese disappears the fastest… not much has changed.



Beef & Portabella Mushroom Fajitas
What I love about these fajitas is that I replaced half the beef with thick sliced portabella mushrooms… you save calories and fat, without compromising on the flavour.
Ingredients
1 marinating steak, sliced into equal strips
2 medium portabella mushrooms, sliced
1 small red pepper, sliced
1 package Old El Paso Fajita seasoning
1 package whole wheat tortilla wraps
Toppings
Sour cream
Salsa
Shredded Cheese
Lettuce
Tomatoes
Guacamole
Method
1. Saute mushrooms and peppers, 2-3 minutes.
2. Add steak, and saute an additional 3-4 minutes.
3. Add fajita seasoning as per package directions.
4. Wrap & eat!
