Zucchini. It’s definitely a vegetable with a magnitude of uses… You can grill it, saute it, even bake with it, but my favourite way of eating zucchini is in stick form. That’s right, zucchini sticks.
They bake quickly, and come together with very few ingredients… and did I mention they are healthy? Pair them with some marinara sauce for dipping and you won’t even think twice about a deep fried cheese stick… Which, to be honest, was exactly what I was craving before I made these.
And in case you didn’t know, now would be the perfect time to pick up some zucchini at the grocery store, because here in SW Ontario, zucchini is in season. Can you say fresh?
Crispy Zucchini Sticks
1 large, fresh zucchini, cut into sticks
1/4 cup Italian seasoned bread crumbs or Panko bread crumbs
Salt & pepper
2 tbsp pizza sauce
1. Preheat oven to 375.
2. Spray baking sheet with cooking spray
3. Dredge zucchini sticks in egg, then bread crumbs, then place on baking sheet.
4. Bake for 20 minutes until outside is crispy.
5. Serve hot with pizza sauce for dipping.
