Cilantro Lime Rice + Mango Salsa Beef Burrito
My love affair with the burrito began earlier this year when I had the opportunity to visit the Culinary Institute of America in San Antonio. Embarrassed to say, but that was the first time I had authentic Mexican food. But to my defense, this is only due to the fact that we have a major lack of quality Mexican joints in KW.
However, it wasn’t until my 2 recent trips to Philadelphia that I became obsessed (like I’m going to open a Mexican restaurant just so I can eat these everyday, obsessed) with the burrito.
And what’s not to love about a burrito? I mean, it’s fully customizable, adding all the ingredients in fun, and it can be held in one hand!
Cilantro Lime Rice + Mango Salsa Beef Burrito
Cilantro Lime Rice
Ingredients
1 cup Jasmine rice, prepared as per package directions
juice from 1/2 a lime
1/2 cup fresh cilantro
Directions
1. Prepare rice as per package directions, stirring in lime juice with the water.
2. After cooked and cooled stir in fresh cilantro.
Mango Salsa
Ingredients
1 large mango, diced
2 medium plum tomatoes, diced
1/2 small red onion, diced
juice from 1/2 a lime
1/2 cup fresh cilantro
Directions
1. Finely dice mango, tomatoes, and onion. Add to medium bowl.
2. Squeeze juice from lime over salsa.
3. Stir in fresh cilantro.
4. Refrigerate for 1 hour.
Cilantro Lime Rice + Mango Salsa Beef Burrito
Ingredients
4-6 large whole wheat tortillas
1 cup cooked beef, cubed
1 cup cooked black beans
Directions
1. Warm tortilla in microwave.
2. Top with rice, beef, beans, and salsa.
3. Roll and serve!
I actually made enough of the ingredients so that I could live off of these burritos for 3 days straight… pure heaven!
