Portabellas Stuffed with Italian Sausage, Cream Cheese & Spinach

Quick & easy meals is the name of the game this week… I am not sure how I got so busy, but it’s left me with very little time to cook.

Portabellas Stuffed with Italian Sausage, Cream Cheese & Spinach

Sidestory: I actually threw a roast in the slow cooker yesterday morning… forgot about it all day… and then discovered it was pretty much a dried chunk of meat by dinner. Ooops!

This recipe however, I have made several times now and it always comes out perfect.

Portabellas Stuffed with Italian Sausage, Cream Cheese & Spinach

This stuffed portabella mushroom is simple to whip up on a hot summer night, and easy to grill up on the BBQ.

Ingredients
1 tbsp olive oil
2 hot Italian sausages, casing removed
1/2 tbsp Cajun seasoning
2 tbsp light cream cheese
1/4 cup frozen Cookin Greens spinach
2 large portabella mushrooms
1/4 cup grated cheddar cheese

Directions
1. Heat oil in pan. Add sausages (with casing removed) to pan. Sprinkle with cajun seasoning. Cook through. Stir in cream cheese. Add frozen spinach. Cook until warm.
2. Spoon sausage mixture into portabella mushrooms. Top with cheddar cheese.
3. Cook on BBQ until mushroom is softened and cheese is melted.
4. Serve hot.

Maybe it’s because of my line of work, but I do love a good stuffed mushroom!
