Tilapia with Tomatoes, Capers & Olives
What a great long weekend! I can’t say it was relaxing, but it was fun! I managed to pack a whole lot of activity into 3 days including, a BBQ with friends, drinks, fireworks, cleaning my house, grocery shopping, a day at the beach, and a nice BBQ’d dinner for two…{no in-depth details on that one just yet…}
After a weekend filled with a lot of activity, I was craving something light for dinner tonight…
I really like this meal because it comes together quickly, and the flavours are incredible! I prefer to use tilapia in this recipe because it’s very light tasting, but you could use haddock or seabass… or any other fish, really….
Tilapia with Tomatoes, Capers & Olives
Ingredient
Drizzle of olive oil
1 tbsp minced garlic
1 can diced, herbed tomatoes
1/4 cup canned corn niblets {or fresh}
1 tsp dried Italian seasoning
Dash of cayenne pepper
1 tbsp capers
1/4 cup sliced olives {green or black}
3 fillets of tilapia
salt and pepper
Method
1. Heat oil in a large pan. Add garlic, cook 30 seconds.
2. Add drained can of tomatoes, corn, seasonings, capers and olives. Cook on medium heat, 4-5 minutes, stiring occasionally.
3. Place tilapia fillets on top of tomato mixture, turn down heat to simmer, cover with lid or foil. Steam fish for 10-12 minutes, or until fish is flaky and cooked.
4. Serve hot.
