Is it just me or has this year gone by at warp speed? I mean, didn’t we JUST celebrate Christmas? It’s crazy to think that in less than 30 days we will be doing it all over again! That means I have two weeks to mentally prepare for the chaos ahead…

As you may recall, we moved into a new house in May of this year. Not only is this new house perfect for us in every way, it happens to put us on the “biggest house” list. What’s the “biggest house” list you ask? Well, it’s the house every family defaults to when holidays and yearly special events happen. Oh, where’s Easter? Well, John & Britt have the biggest house… Christmas? Well, John & Britt’s house can easily accommodate 20 people. Birthday party? John & Britt have a backyard patio! You get the point.

I knew this move would instantly make us the default… and now we are hosting three Christmas dinners in December. THREE!! I wish I could tell you this was all the Christmases we have to attend, but no, this is half of them… we still have THREE more on top of this! Not to mention it’s Emily’s first Christmas and I really want to be present and make it special for her, which means one thing… I have to let go of my Type-A tendencies and just embrace the chaos. No fancy-schmancy tablescapes. No tediously wrapped gifts. And no time-consuming and complex meals. Yup… just gotta let it all gooooooo! (Frozen’s “Let It Go” is my unofficial holiday anthem this year!)

That brings me to this recipe…. a Caramelized Pear & Walnut Topped Brie. This is actually the most popular recipe on my blog (you can find my original 2013 post about it here), and for good reason… it’s so. freaking. easy! So while it might look fancy-schmancy, time-consuming, and complex, it’s a beautiful appetizer that can be pulled together in less than 20 minutes… which leaves you plenty of time to partake in the chaos!

Description

Quick and easy, this festive baked brie is the perfect appetizer for any holiday gathering. Rich and creamy brie is topped with sweet caramelized pears and crunchy walnuts before being baked until melty! A drizzle of local honey adds an irresistible touch of sweetness making this an appetizer that is sure to disappear quickly!


Ingredients

  • 1/4 cup brown sugar
  • 2 tbsp water
  • 1/4 cup chopped walnuts
  • 1 large wheel of brie
  • 3 very ripe pears
  • Honey for drizzling


Instructions

  1. Cut the rind off the top of the wheel of brie. Place cut side up in brie baker.
  2. Wash and slice pears into 1/2 inch thick slices.
  3. In a medium frying pan, over medium heat, cook sliced pears until they start to release moisture, about 1-2 minutes. Add sugar and water. Continue to cook, stirring frequently, for another 3-4 minutes.
  4. Once sugar starts to thicken and coat the pears, add the walnuts. Gently stir until pears and walnuts are lightly coated.
  5. Spoon mixture over brie, or if you want to get fancy, layer each individual piece of pear around the top of the brie and scoop walnuts on top. At this point you can refrigerate until you are ready to bake.
  6. To bake: place brie baker in a 350C oven for 10-15 minutes or until the brie starts to bubble and melt.
  7. Serve with crackers or baked baguette slices.
