Roasted Heirloom Tomato Gnocchi

Finally it has happened. I get to enjoy the fruits of my labour… literally. After what seemed like an eternity, my garden is bright with colour. From purple beans to red & yellow heirloom tomatoes, I’ve never seen such a delicious sight.

As my hands worked their way through the garden, harvesting the perfectly plump tomatoes, my mind wandered. Oh the possibilities for these tomatoes. From pasta sauces and salsas, to salads and appetizers. But that day I knew the exact fate these juicy morsels would face.

The simplicity of this dish is what’s so amazing. Or maybe it’s the fresh flavours. Either way, I could easily eat this every night for dinner. Roasted ever-so-slightly in the oven with a touch of garlic and mushrooms, these tomatoes become a thing of beauty when atop fresh gnocchi tossed in basil pesto. Simple to prepare. Simple to enjoy. Now that’s my kind of meal.
