Peach, Prosciutto & Burrata Flatbread

Confession: I’ve gone my entire adult life, thus far, wishing for a fruit tree in my backyard.

Easy Peach, Prosciutto & Burrata Flatbread

I’ve only lived in a house that had a fruit-bearing tree once… when I was 11 or 12. It was on a country sideroad just outside the small town of Wellesley. It was a pear tree, and it had more pears than we could ever eat! Trust me, my sisters and I tried! Whatever we couldn’t eat we’d gather up in baskets and try to sell at the end of our driveway…. pretty unsuccessfully I might add! While we only lived there for a short period of time, the experience stayed with me, and ever since then, I have been convinced I need a fruit tree in my backyard!

If I had my choice of any fruit tree in the world I would, without a doubt, pick a peach tree! Nothing would bring me more joy than venturing out into my backyard every morning and plucking perfectly ripe peaches off a tree! Each bite, sweeter and juicier than the last! I’d easily spend all day in the kitchen cooking up everything from sweet desserts to savoury entrees. If you ask me, versatility is one of the best things about peaches. Their sweetness makes them perfect for desserts (like my Peach & Raspberry Crisp), while their tartness complements more savoury dishes.

Now I wish this story ended with me saying “and this summer we’re planting a peach tree in our backyard… and you get a peach tree, and you get a peach tree… we ALL get a peach tree!!!”…. but it doesn’t. Womp womp! That doesn’t mean I’ll stop enjoying peaches… it just means when Ontario peach season rolls around (is it July yet?) I will be ready, and this super easy Peach, Prosciutto & Burrata Flatbread will be at the top of my to-make list!

Description

Sweet & juicy peaches pair perfectly with salty prosciutto, creamy Burrata, fragrant pesto and a drizzle of tangy balsamic reduction in this super easy flatbread recipe! If “Summer” was available in flatbread format, this would be it!


Ingredients

Units Scale

1 Italian-style Flatbread
2 tbsp basil pesto
1/4 cup Burrata cheese
1/2 peach, pitted and thinly sliced
2 slices of prosciutto, cut into pieces
1 tbsp fresh basil, roughly chopped
Drizzle of balsamic reduction


Instructions

  1. Preheat oven to 350ºF.
  2. Place flatbread on a baking sheet lined with parchment. Layer on pesto, burrata, peach slices, and prosciutto.
  3. Bake in oven for 15 minutes, or until edges of flatbread start to turn golden brown and cheese is melted.
  4. Remove from oven and sprinkle with chopped basil and drizzle with balsamic reduction. Enjoy warm.
