Christmas Leftovers: Broccoli & Cauliflower Salad

Now that the Christmas feasting has officially come to an end (I had my last family party last night), I can start tackling the leftovers in my fridge… all three shelves worth of leftovers!

Unfortunately this year we did not have any leftover scalloped potatoes, but I was lucky enough to sneak away with 1 large container full of my “famous” Broccoli & Cauliflower Salad. Even though this salad is very easy to prepare, I only whip up batches at Christmas time… when my entire family is clamoring for a spoonful.

Broccoli & Cauliflower Salad

This easy to prepare Broccoli & Cauliflower Salad is packed with vitamin C & K. Adding different kinds of cheeses can boost the flavour profile, while tossing in some seeds & nuts add a nice crunch.

Ingredients
2 medium heads of broccoli
1 small head of cauliflower
1/4 cup light mayo
1/4 cup light sour cream
3 tbsp white sugar
splash of white vinegar
salt & fresh cracked black pepper to taste

1/2 small red onion, diced
1 cup shredded cheddar cheese
1/4 nuts and seed mixture
1/4 cup fresh bacon bits

Directions
1. Wash and break up broccoli & cauliflower into bit sized pieces. Place in a large serving bowl.
2. Mix up mayo, sour cream, sugar, vinegar, and salt and pepper to form the dressing. Pour over broccoli and cauliflower and toss until well covered.
3. Add diced onion, cheese, nuts & seeds, and bacon bits. Toss until well distributed in salad.
4. Serve cold.If I had to pick, this would be my favourite Christmas dinner leftover… followed very closely by stuffing.
