Quick & Easy Potato Salad
On occasion I get a crazy, uncontrollable craving for a certain food. Most of the time it’s peanut butter, chocolate, and pumpkin… but this time it was something a little bit more savoury vs. sweet. Potato salad. I’m not sure if it’s just me, but I certainly don’t eat potato salad very often. It usually finds it’s way into family potlucks, holiday get togethers, and bbq’s with friends – it’s not something I whip up on a regular basis…. and I am not sure why, because it is delicious!
This easy recipe can easily be adapted to fit your tastes… I love dill, so I added a lot of dill. I also like egg in my potato salad so I added some hard boiled eggs. Onions? You bet! Even a sprinkle of paprika made it’s way in… it’s simple and versatile.
Quick & Easy Potato Salad
Ingredients
large potatoes (red or white) cut into 1 inch cubes
hard boiled eggs
mayonnaise
vinegar
dill
salt & pepper
paprika
green onions
Directions
1. Cut and boil potatoes over medium-high heat. Once soft, strain potatoes and run under cold water. Strain again and set aside.
2. Meanwhile, boil eggs until hard. Set aside until cool. Dice into chunks.
3. In a small bowl mix together whatever quantity you like of mayonnaise, vinegar, dill, salt & pepper, and paprika.
4. In a large bowl mix boiled potatoes with mayo mixture, diced hard boiled eggs, and green onions. Serve cold.
