Grilled Veggie Primavera + Two in the Kitchen

I have something very important to share. I haven’t been completely honest with you. You see, for the past year I have taken 100% credit for making most of the recipes on my Recipes tab – when that is not true. There is in fact two of us in the kitchen, and I do believe he deserves some credit… that’s right, “J” helps me cook most of these meals… and his main domain is the grill.

Take a look back at my recipes, and chances are if it’s grilled, it’s because “J” helped. If it has grated cheese on it, it’s because “J” helped. If it’s served with garlic bread on the side, it’s because “J” helped. So there you have it… it’s not just me whipping up dinner every night – “J” helps too!

Grilled Veggie Primavera

Fresh grilled veggies add a nice flavour profile to this simple to prepare pasta. Use whatever fresh veggies you have on hand.

Ingredients
Spaghetti or Capellini noodles cooked as per package directions
1 tbsp olive oil
1 tbsp Cajun seasoning
1 tsp Herbs de Provence
Fresh veggies (mushrooms, spinach, tomatoes, zucchini, red & green peppers, onions)
Parmesan Cheese

Directions
1. Cook desired amount of pasta as per package directions.
2. Meanwhile, grilled assorted veggies on BBQ or on an indoor grill.
3. Mix oil and seasonings into drained, warm pasta. Toss with sliced, cooked veggies.
4. Serve with a sprinkle of Parmesan cheese and a side of garlic bread.

“J” also helps by patiently waiting while I take several photos of our meal before I will let him eat. He is not averse to hearing me say “don’t take that mushroom – it’s the hero,” or “I know, I know, I know… I’m almost done I swear!”
