Fresh & Healthy Nacho Dip

Yesterday was a busy day. After putting in some early morning time “at the office,” I headed over to Amanda’s to help her pack up her house. You never really realize how much stuff a person has in their house until you start to put it into boxes! Nikki and I worked on the kitchen, while Amanda tackled the office. By the end of the day I was left with 30 minutes to whip up this dip + cut “J’s” hair, before heading to my aunts house for my cousin’s birthday party. Luckily this recipe comes together quickly, and doesn’t lack in the flavour department!

Fresh & Healthy Nacho Dip

This healthy dip is as simple as it looks. A light drizzling of oil and vinegar give this mixture the zing it needs.

Ingredients
1/4 cup olive oil
1 tbsp white wine vinegar
Fresh cracked black pepper
Fresh cracked sea salt
4 Roma tomatoes, diced & seeds removed
4 ripe avocados, diced
3/4 cup black beans
1 can corn kernels
1/2 cup feta cheese

Directions
1. In a bowl, whisk together oil, vinegar, salt a pepper. Set aside.
2. Dice tomatoes & avocado into 1/2 inch cubes. Add to large bowl.
3. Open and drain canned beans & corn. Add to bowl. Pour oil mixture over contents of bowl, mix gently.
4. Sprinkle with feta cheese. Serve with tortilla chips, toasted pitas, or crackers.
