New Obsession: Spaghetti Squash
I’m not gonna lie… it’s been hard to avoid it all when I go to the grocery stores, I mean, right there in the middle of every isle in the produce section is a giant crate {yes a crate, big enough for me to climb into} filled with of every kind of squash you can think of… and do you know what this means??
MmmHhmmm!
Two things… 1) it’s officially fall… and… 2) I may be developing a slight {slight} obsession with spaghetti squash…
Oh gosh, the things you can do, the things you can do with a squash or two!
You can make:

Or you can make it like me…
Not-So-Traditional “Spaghetti” and Meatballs
Ingredients
1 large spaghetti squash, cooked
1 cup spaghetti sauce
1/2 cup mixed means
3 large store-made, fresh turkey meatballs
sprinkle of Parmesan cheese
Method
1. Bake spaghetti squash in oven as per the sticker directions.
2. Cook meatballs as per package directions.
3. Heat sauce and beans together.
4. Layer squash, sauce, meatballs, sprinkle cheese… consume!
Ohh so easy and oohhhh soooooo good!!
I literally have been eating this for the past three days! heaven!
